Chicken, Spinach & Artichoke Panini:
RECIPE:
Top 1 slice of whole grain bread with 1/2 cup of baby spinach, 1/4 cup artichoke hearts, 2 1/2 ounces of grilled, sliced chicken breast, 1 slice of provolone cheese and the other slice of whole grain bread.
Heat a grill pan over high heat, spray with non stick spray. Grill 3-4 minutes on each side, pressing down with a spatula.
